Thalipeeth (Spicy
Pancake) is a Maharashtrian Recipe
made with multi grain flours called “Bhajani”.
It is usually served as a breakfast or snack with some butter or yogurt or some
dry garlic chutney. It is extremely nutritious and a common breakfast recipe at
my home.
In India you can get a specific flour known as ‘Bhajani peeth’ which is the main ingredient for thalipeeth. If you can’t find it then you can make a flour by combining jowar flour, rice flour, besan, Bajra flour and wheat flour.

Serves: 2-3 persons (8-9 Thalipeeths)
Ingredients:
1 cup whole Wheat flour
1/2 cup Jawar Flour
1/2 cup Rice Flour
1/2 cup Bajra Flour
1/2 cup Besan( Gram Flour)
3 finely chopped Onion
4 cloves crushed Garlic
1" piece of Ginger
2 tsp Coriander & Cumin powder (Dhania + Jeera Powder)
1 tsp Garam Masala
2 tsp Red chilli Power ( Or Paste of
Green chilli )
1 tsp Cumin seeds (Jeera)
2 tbsp Sesame seeds (Til)
1/4 tsp Ajwayan / Carom seeds
1/2 tsp Turmeric powder
1 cup finely chopped Coriander leaves (Dhania Patti)
1 tbsp Curd (Dahi)
Salt to taste
a pinch of asafetida (Hing)
Oil
Directions:
1. Take chopped onion, crushed garlic,
crushed ginger, coriander+cumin powder, garam masala, chilli powder, cumin
seeds, sesame seeds, ajwayan, turmeric powder, finely copped coriander leaves,
salt, 1 tbsp oil, curd in bowl and mix well.
2. Add whole wheat flour, jawar, bajra
flour, besan, rice flour in a mixing bowl.
3. Mix everything together very well.
4. Start to add water and knead it in
to stiff dough.
5. Keep it to rest for 10 min.
6. After that make small balls of the
dough.
7. On a rolling board, spread a square
piece of wet muslin cloth or a greased plastic cover.
8. Pat each ball with fingers on a wet
muslin cloth or a greased plastic cover to roll out the thalipeeth. (Wet your hands before patting.)
9. In the meantime heat up the
tawa.
10. Drop 2-3 drops of oil on the
thalipeeth and put it on the hot tawa. Put the rolled out thalipeeth such that
the top touches the tawa.
11. Carefully remove the cloth/plastic
cover from the thalipeeth.
12. Let it cook well on both sides.
13. Serve hot with Butter or Curd.
